From Freda Forbes

jelly, finely chopped nuts

Cream butter - add sugar gradually + mix well. Add egg yolk, vanilla + flour. Shape into balls - walnut size. Dip in slightly beaten egg whits. Roll in chopped nuts. Dent in centre with thimble, put on greased pan + in oven - 350 12-15 min. Dent again + add jam in dent.

Christmas Jelly

Dissolve red jelly in 1 cup hot water. Add 3/4 cup cold, pout into mould. Chill until nearly thick + slice bananas into it. Chill.

Dissolve green jelly in 1 cup hot water + 3/4 cup pineapple juice Chill 1/2 cup of this until slightly thick, fold into 1 cup whipped cream. Pour over red + let harden. Chill remaining lime + fold into it 1 can of crushed pineapple. Put on top. Chill.

Shortbreads

1 cup butter
1/2 cup brown sugar, lightly packed
3-3 1/2 cups sifted flour

Cream butter, gradually add sugar + cream well

Gradually mix in about 2 cups of flour

Turn dough onto floured surface + knead until dough cracks

Roll out to 1/4" thickness (cut with cookiedcutters)

Put on ungreased sheet

Slow oven 300 30-40 minutes

Note from M: can be decorated with candied cherry pieces, patted into rounds instead of rolling out, or have other ingredients (chopped Skor bars, green tea powder) mixed in.

Christmas Cake

.75 lb butter
2 cups sugar
6 eggs
3 cups bread flour
.5 tsp salt
1 lb white raisins
1 lb cherries (I assume preserved or candied)
1 lb pineapple (same as cherries)
.5 lb pecans
1 cup pineapple juice

Steep fruits in juice overnight

Cream butter well, add sugar, .5 cup at a time + cream again

Add eggs 2 at a time, beat again

Sift flour + salt, fold into batter, stir in fruits and nuts.

275 - 3.5 hours

Edited a bit for clarity, hope I got this right.
